Would someone who is still learning Chinese be able to find a paid or unpaid internship in China? If not, what type of work does it usually entail?

@ kamillayun – I think it depends on the company and the specific requirements. Some companies depending on the type of work that is involved may value this. With this said, it is important that you know that only students that are legally studying in China whom have had their documents and student visa validated by the Public Security Bureau can engage in an internship. While some have done it on other types of visas, you could face consequences if caught.
